Mountain Cooking Club offers class on braising, Feb. 7

An upcoming cooking class from the Mountain Cooking Club in Clyde will highlight the technique of braising — a mixture of frying and stewing, which creates notably tender and flavorful results. Just in time for Valentine’s Day, Ricardo Fernandez, the former owner and chef de cuisine of the Lomo Grill, which operated for 16 years in downtown Waynesville, will offer instruction on how to prepare a roasted root vegetable salad, braised cabernet short ribs and a white chocolate and raspberry crème brûlée.
The class takes place 10:30 a.m.-1 p.m. Saturday, Feb. 7, at Fines Creek Community Kitchen, 192 Fines Creek Road, Clyde. The cost is $60, plus a $1 membership in the Mountain Cooking Club. To register, call 246-7465 or contact Fernandez at chefricardos@gmail.com.

MENU
Roasted Root Vegetable Salad

Roasting brings out the flavor of hearty root vegetables – tossed with romaine lettuce and a honey Dijon vinaigrette

Braised Cabernet Short Ribs

Braising further tenderizes these delectable cuts of beef, while Cabernet Sauvignon lends the flavor of a long-simmering stew. We will pair our short ribs with a creamy polenta with mushrooms and thyme.

White Chocolate & Raspberry Crème Brulee

In honor of Valentine’s Day, this is a sophisticated take on fresh berries and chocolate. Amore!
