Season’s at Highland Lake to host South American Wine Dinner

Season’s at Highland Lake announces their annual South American Wine Dinner spotlighting the Chef’s creativity with multiple small plate courses.  This elegant five-course tasting is set for Thursday August 25, at 6:30 p.m. in a beautiful private dining room at Season’s. Reservations for this exclusive event are required.  The cost is $70 per person including the selected wine pairings.  This event features cuisine inspired by the southern continent’s vast cultural diversity, paired with many of the finest wines of the region.

Janelle Payne of Mutual Distributing will be sharing information on her wine selections from South America.

The appetizer course features Cilantro-Braised Lamb Shank with Cannellini Bean Hummus in Seco sauce. This Peruvian-Inspired dish will be paired with Crios Torrontes 2015 from Argentina, a fruity and floral wine which still retains a crisp, dry finish.

The second course comes from the North Carolina coast prepared with a Latin touch- Striped Bass Ceviche with Avocado mousse, Garden radishes and Nori shaker garnish. This wonderfully fresh dish will be presented with a Uruguayan Albariño, from Garzon winery.

Next guests will sample a true Chilean specialty, Verlasso Salmon. This fish will be coming from the Patagonia producer which is the industry leading provider of sustainable farm raised salmon. It will be served with an Acorn-Goat cheese Purée, Sautéed Spinach and Medjool Dates. Accompanying this plate will be a taste of Salentein Chardonnay Reserve, 2013 of Argentina.

The entrée course will feature Angus  NY Strip Loin with Chimichurri, Yukon Gold Rosette and garnished with Andean Pink salt coming with a sample of Ben Marco Cabernet Sauvignon 2013. This is a great pairing of Argentine flavors!

For the finale Chef Boeger will prepare a Uruguayan pastry called Chaja! Incorporating  local SC peaches, fresh Sponge cake and fluffy Meringue this should be a fitting finish to a great meal. The final wine pairing will be Terra Aldina Cool Moscato,2014 from Chile.
