Francine Delaney New School for Children hearty vegetable Soupapalooza

1-2 tablespoons olive oil
1-2 tablespoons dried oregano
1-2 tablespoon dried basil
1-2 teaspoon salt
½ teaspoon pepper
4-6 garlic cloves, crushed
2 bay leaves
2 stalks chopped celery
1 cup chopped onion
2 cups chopped carrots
2 cups vegetable of choice
2 cups chopped green beans
2-3 cups diced potatoes
4 cups chopped tomatoes
6-8 cups of water

Combine onion, oil, seasonings and garlic in a pot and saute for three to five minutes. Add all other ingredients and make sure there is enough water to cover the vegetables. Cook for 25 minutes.
