Pimento cheese dip

Makes 3 cups

2 pounds hoop cheese (or cheddar cheese), cubed
1 cup mayonnaise
½ cup relish (green tomato or sweet pickle)
1 tablespoon smoked paprika
A couple dashes of hot sauce
½ cup chopped pimento
1 to 2 tablespoons diced pimento (for topping the dip)

In a food processor, combine the cheese, mayonnaise, relish, paprika and hot sauce and process until smooth. Add the chopped pimento and process just until the pepper pieces are incorporated but not fully pureed. Transfer the cheese mixture to a serving bowl and top with the diced pimento.
