Chai tea

To test your talents as a chai artisan, try using the following recipe as a base and altering it until you find a mixture that you love.

CHAI TEA

Time to make: 30 to 45 minutes
Servings: 8

8 cups water
4 tablespoons loose black tea
1 teaspoon ginger, sliced into rounds
3 cinnamon sticks
5 cardamom pods
4 star anise
10 peppercorns
1/4 cup of sugar or honey
Milk of choice

Bring water to a boil. Add remaining ingredients and simmer over medium heat for 15 minutes. Strain and serve. — J.C.
