Cucumber raita

Blue Dream Curry House

This is a great condiment for naan, pita or curries.

1½ cups plain yogurt
1 medium-sized cucumber, chopped
1½ tablespoons cilantro, minced
1½ tablespoons scallion, minced
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon salt
1/4 teaspoon cayenne (optional)
Freshly ground black pepper

Put all ingredients in a bowl, then fold and mix with a rubber spatula (do not use a blender or whisk) until ingredients are distributed evenly. You can also add a pinch of paprika on top for color and flavor.
