A-B Tech student culinary team prepares for state, national competitions

A-B Tech Community College’s 2015-16 Student Culinary Team is making its bid to participate at the national competition level for the 10th time starting with the state level contest on Saturday, December 5 at Central Piedmont Community College in Charlotte.

The winner of the competition will advance to the American Culinary Federation’s Southeast Regional competition in January in Atlanta. A-B Tech students will be competing against teams from Central Piedmont, Fayetteville Technical Community College and Alamance Community College.

Team members are Damon Trajano, captain; Jessica Olin who will be creating the appetizer; Josh Gray on the salad; John Rice will make the entrée and Carrie Minogue will be in charge of dessert. Samantha Lane serves as the alternate. The team coach is Chef Chris Bugher. Her was a coach of the nationally ranked 2014-15 team.

“What inspired me to join the culinary field was the ability to gain knowledge and learn classical cooking techniques through hands-on experience, for which A-B Tech is known. Through this experience, I have become a more efficient student, cook, and employee,” Olin said.

Gray moved to North Carolina when he was 12 after growing up in the Philippines. “After being a line cook for a few years I decided to enroll in culinary school in order to gain further knowledge in the industry. After graduation, I look forward to continuing to learn and gaining further experience, especially in the area of charcuterie and cured meats, and to exploring food and culture of the Philippines,” he said.
