Starting June 1st, Chestnut Restaurant will start a Monthly Dinner Menu. According to Chef Brian Crow, “We are striving for a balance of structure and creativity. I believe that this will benefit the guests who seek a measure of consistency balanced with local products and creative preparations. It will also give the cooks and Sous chefs an opportunity to settle into a menu, honing their skills and reefing plating, flavor and presentation”
We agree! Here is a sample of what’s in store for June:
Porchetta – American Pig Pork Belly Roll, Goat Cheese Grits, Sauteed Local Greens, Vanilla Honey Poached Figs, Fried Leeks, Pork Jus
Grilled Cauliflower Steak – Squash Noodles, Local Mushrooms, Baby Heirloom Tomatoes, Basil Pesto, Arugula, Parmesan, Marinara, Fried Basil (V). V+ if you leave the Parmesan off
Rhubarb Glazed Quail – Manchester Farms, Almond Fennel Puree, Strawberry Watercress Salad, Ginger Vinaigrette, Pickled Rhubarb (GF)
Rabbit Gnocchi– Confit Sosipiro Ranch Farms Rabbit, House Made Gnocchi, Baby Carrots, Leeks, Radish, Mint, Natural Juice
V = Vegetarian, V+ = Vegan, GF = Gluten Free
