Next month’s Molecules in the Mountains is taking the appreciation and dissection of craft brewing down to the microscopic level with a focus on the science of fermentation.
The April 9 conference, sponsored by the N.C. Biotechnology Center and Western Carolina University, is designed to appeal to the scientist studying the molecular role of yeast in the brewing process, as well as the craft brewer seeking to more fully understand the science, said Sean O’Connell, who heads the biology department at WCU and is helping organize the conference…
